Fruity berry cake with a juicy konjac sponge base

Ingredients

For the dough:

129g Erythritol
1g Vanilla powder
75g Ground Almonds
30g Coconut Flour
3g Roooaaar Konjak
90g Chilled Ghee
4 Eggs

For the crumble:

40g Ground Almonds
10g Coconut Flour
30g Chilled Ghee
29g Erythritol
1g Vanilla powder
1 tsp Cinnamon

For the plum jam:

200g Plums for cooking
1g Konjac Flour
29g Erythritol
1g Vanilla powder

For covering the cake:

100g Fresh Plums

Instructions

Crack the eggs and whisk until the mixture has doubled in size.

Now add the powdered erythritol and fold in.

Combine all dry ingredients in a mixing bowl and mix well.

Carefully sift the flour mixture into the egg mass to avoid lumps.

Gently fold everything together to create a fluffy batter.

Pour the batter into a tall baking ring and bake for 40 minutes at 160 degrees Celsius in a preheated oven.

For the cream, grind 50g freeze-dried raspberries to a powder.

Mix mascarpone, low-fat curd, powdered erythritol, and raspberry powder until smooth and then chill.

Remove the cake from the baking ring after the baking time and let it cool completely.

Use a cake slicer to divide the cake into evenly thick layers.

Spread the curd-mascarpone cream on the cake layers. Optionally, the cake can be further refined with some berry jam to taste.

Finally, garnish the cake with berries of your choice and keep in a cool place until serving.

The product arrived quickly, the quality is amazing (not the slimy wet konjac substitutes that smell fishy). Cooking time is around 12-15 min, so the rice is perfect for making risotto or paella. The pasta is also amazing with some good carbonara, pesto or bolognese! They are perfect for a keto or low-carb lifestyle!

OK this company is amazing. I purchased the konjak rice. I'm on a keto diet so thought this would be perfect for me. It was amazing ! Easy to cook and honestly the closest thing to actual rice I've tried so far. And I've tried alot of products. Egg fried rice is my favourite dish because frying the konjak rice makes it that bit more crispier and rice like. Anyway, delivery was fast, Communication too. The only thing I would say is that they should provide the booklet that is also delivered, in English as well as German.. for those who don't speak German. But it was easy to cook so it didn't make a difference THANK YOU SHILEO, I've ordered another set. :)

Excellent support. Fast delivery. Low carb. Products are high quality (dried instead of preserved in liquid), very delicious and have the perfect texture when prepared as stated. Taste / texture can be compared with glass noodles (in my opinion). Thumbs up and 5+ stars :-) Keep going!
