White Bolognese with Konjac Pasta

Ingredients

  • 2 thick carrots (170g)
  • 150g brown mushrooms
  • 100g leek
  • 1 can white beans (250g)
  • 1 clove of garlic
  • 1 red onion (60g)
  • 50g cashew nuts
  • 2 tablespoons nutritional yeast (8g)
  • 1 teaspoon garlic powder (5g)
  • 30ml olive oil
  • 200g soy mince
  • 300ml vegetable broth
  • 6 nests of dried Shileo Lower-Carb Fettuccine, 240g
  • Salt, pepper, thyme, basil, oregano, nutmeg
  • 1 teaspoon lemon juice (5ml)

Finely chop the carrots and mushrooms.

Slice the leeks.

Rinse the white beans and blend with 200ml of vegetable broth until smooth.

Now prepare the vegan parmesan. For this, toast the cashew nuts in a pan.

Then place them in a blender and grind them finely.

Add 2 tablespoons of nutritional yeast, 1 teaspoon of garlic powder and 1 teaspoon of salt, and blend again.

Add the Parmesan to the bean puree and blend again to achieve a smooth mixture. (Reserve a third of the Parmesan for garnish)

Dice the onions finely, slice the garlic.

Sauté the onion with oil in a pan until translucent and then add the mince and brown it. Finally, add the garlic and let it simmer on medium heat for 1 minute. Then transfer to a plate and set aside.

Now add the leek, mushrooms, and carrots to the pan and fry with a little bit of oil. Season with thyme, oregano, salt, pepper, and nutmeg. (The vegetables should remain al dente)

Add the remaining vegetable broth and let it simmer for 5 minutes.

Add the bean puree and the mince and stir well. Continue to simmer for another 5 minutes.

In the meantime, cook the konjac pasta in slightly salted water until tender and drain.

Finally, serve the pasta with the white Bolognese sauce and garnish with the remaining Parmesan.
