A Christmas Apple Treat Semolina Pudding Cake with Baked Apple Topping

Ingredients

For the base:
  • 150g almond flour
  • 50g coconut oil
  • 3 eggs, size M
  • 75g unsweetened soy yogurt
  • 1/2 packet baking powder
  • 100g erythritol
  • 1 tsp cinnamon
For the semolina pudding layer:
  • 140g konjac rice
  • 600ml almond drink
  • 30g low-fat quark
  • 30g erythritol
  • A pinch of cinnamon
For the baked apple topping:
  • 2 apples
  • 50g sliced almonds
  • 20g raisins
  • 50ml date syrup
  • 1 tbsp cinnamon
  • A squirt of lemon juice
  • 10g coconut oil
  • 4 sheets of gelatin
  • Some water

Instructions

1.
For the base, mix all ingredients together and stir into a smooth dough. Then place in a greased springform pan and bake for 25 minutes at 200 degrees Celsius (fan oven).

Once the cake is baked, remove from the pan and let cool thoroughly.

For the semolina pudding layer, grind the konjac rice in a blender and bring to a boil with almond drink. Then stir in low-fat quark and season with erythritol and a pinch of cinnamon. Spread the mixture on the cake and chill for about 30 minutes.

Once the cake is completely cooled, prepare the baked apple topping. First, toast the sliced almonds in a pan and set aside.

Core the apples, cut them into small pieces, and sauté lightly in a pan with coconut oil.

Add some water and dissolve the date syrup in it. Enhance with cinnamon, raisins, almonds, and a squirt of lemon juice. Let it simmer on the lowest setting, stirring occasionally.
7.
Soak the gelatin sheets in cold water for 5 minutes, then stir into the pan. (It should be a slightly thick liquid)
8.
Now spread the mixture over the cooled cake and chill for another hour.
9.
For serving, additional almond slivers can be sprinkled over the cake.
