Romanesco Risotto with Konjac Rice

Ingredients

  • 400g frozen Romanesco
  • 500ml vegetable broth
  • 140g konjac rice
  • 1 onion
  • 2 cloves garlic
  • 50g wild garlic cheese
  • 20ml olive oil
  • 10ml white wine vinegar
  • Parsley
  • Salt, pepper

Instructions

1.
Thaw Romanesco and chop into bite-sized pieces.
2.
Finely dice onion and garlic.
3.
Sauté onions and garlic until translucent and combine with konjac rice.
4.
Deglaze with vegetable broth and white wine vinegar and season with salt and pepper. Simmer covered on medium heat for 20-25 minutes.
5.
Add Romanesco, wild garlic cheese, and parsley.
6.
Mix well.
7.
Serve the risotto topped with a little cheese topping.
